Doc Leonard's Fish Fry Recipe

Ingredients to coat 200 filets:
- Approximately 3 lbs of white flour
- Approximately 3 lbs of corn meal
- 1 container lemon pepper spice
- About 3/4 of a 10 lb container of bacon grease (a cherries container from the cherries
sale works great!)
Ingredients per bag of coating mix (Generally 2 bags are made up):
- 1.5 lbs white flour
- 1.5 lbs corn meal
- 4 capfuls of lemon pepper spice
Typically the fish are frozen in 1/2 gallon milk containers. In these it takes
approximately 12 hours to thaw. Once thawed, they are dipped into a coating bag and cooked
in bacon grease over a wood-fueled fire. Then they are devoured!
